Watermelon Salad
When you’re HOT…Watermelon is the way to Go!!! This Salad is so Good, that it’s hard to stop eating it, and so refreshing in the Hot Summer days… Did I say it was really easy to make???
4 – 8 oz Portions
Ingredients:
Dressing
3 Tbsp Lime Juice
1 Tbsp Sugar Raw or light Brown Sugar
1 Tbsp Olive Oil
Salad
3 C Watermelon, Diced big (bite size)
2 C Cucumber, Quartered (seed part removed)
¾ C Red Onion, Chopped small
1 ea Jalapeno, Chopped (seeded and deveined), or more if you want more heat
½ C Crystalized Ginger, Diced small
½ tsp Kosher Salt
½ tsp Black Pepper
1 oz Mint Fresh, Julienned or Chiffonade
Instruction:
Mix lime juice and sugar and stir often until sugar has dissolved
Adding the Olive Oil to the dressing right before dressing the salad
Mix all the Salad ingredients in a bowl, add the dressing and the fresh Mint.
Refrigerate for at least an hour for the flavor to mingle and it's to eat!!!
