Tomato Soup
Tomato Soup is a Classic Comfort food, and usually comes in a can… But this version, my version is one that can be eaten Cold or Hot and it is delicious either way, especially with a Grilled Cheese Sandwich!!!
4 Portions / 6 oz Servings
Ingredients:
2 Tbsp. Olive Oil
2 ea Shallots, Julienne
2 ea Garlic Cloves, Minced
½ tsp. Kosher Salt
½ tsp. Black Pepper
½ tsp Oregano, Dried
1 Lb. Red vine Tomatoes, Quartered
1 Tbsp White Wine Vinegar
1 can/14 oz Crushed Tomatoes
½ C. Sugar (if needed)
Basil fresh for garnish (optional)
Mozzarella Pearls (optional)
Roasted Cherry Tomatoes (optional)
Instruction:
Sautee Shallots, Garlic with Olive Oil, salt and Pepper and Oregano.
Stirring often for about 2-3 minutes on Medium High heat.
Add the Tomatoes and cook for at least 5-7 minutes.
Add White Wine Vinegar and reduce a couple minutes.
Add Can of Crushed Tomatoes and bring to a slow simmer for 15-20 min.
Check flavor and if you think it needs a little sweetness, add sugar.
While hot blend the soup and pass through a strainer, to obtain a creamy soft texture.
Serve Hot with a Grilled Cheese Sandwich or once at room temperature place in fridge and let it chill some hours (better overnight)…
