French Onion Soup

On a cold day or night there’s nothing more comforting than a French Onion Soup, and it is extremely easy to make… The original version is with Beef Broth, but you can convert it to a vegetarian version with vegetable Broth…

 



 

2 Portions / 2 Servings

Ingredients:

 

2 Tbsp Butter

8 oz onions sliced semi thick

2 ea Garlic Minced (optional)

Salt and Pepper to taste

2 Tbsp Cognac (Brandy or white wine could be and option)

½ Tbsp Flour (optional)

1 ea Bay Leaf

3 C Broth of choice, I use a strong broth or 1 Tbsp of Vegetable Base for 3 C water

4 oz Gruyere Cheese Grated (or any good melting cheese will do)

2 oz Parmesan Grated

2 ea Slices of Country Bread or 4 slices of baguette Toasted

 

Instruction:

 

Sautee onions in butter adding a pinch of Salt & Pepper. Cook Onions and Garlic until they start to caramelize and are golden and careful to not burn the garlic if using any.

Add cognac and deglaze or cook until the cognac has evaporated.

Add the flour, misx well. Add bay leaf, and slowly add broth stirring until all is well combined.

Cook the soup for 7 - 10 minutes for the flavors to mix well, add salt & Pepper to taste if needed.

Set oven to broil. And in an oven resistant bowl or a French Onion Soup bowl (I prefer the shallower ones). Place the hot Soup, Sprinkle some of the gruyere cheese, cover with the bread and top with the grated gruyere and finally with parmesan.

 

Broil until the cheese has melted and has a nice golden crust.

Serve Hot!!!
