Mandarin Almond Salad
This Salad recipe comes from my grandmother Nena, unfortunately I don’t have a hand written recipe from her, but made it as near to hers in flavor as I possibly could!!!
4 oz Portions / 8 Servings
Ingredients:
1 Lb. Romaine Heart Lettuce
1 Can Mandarin segments, Drained
4 oz Almonds
2 Tbsp. Sugar
4 Tbsp Vegetable Oil
2 Tbsp Red Wine Vinegar
1 tsp Kosher Salt
½ tsp Black Pepper
1 tsp Balsamic Vinegar
½ ea Shallot, Minced
1 Tbsp Worcestershire Sauce
Instruction:
-Wash lettuce and Air dry while preparing the Salad
-In a small Saucepan heat (med heat) the almonds with the sugar until sugar is melted and golden, place the caramelized almond on a greased aluminum foil to dry and come to room temperature. Brake in small pieces and set a side
-Make vinaigrette with Oil, Vinegars, Salt & Pepper, Shallots and Worcestershire Sauce.
- Brake Lettuce with hands in bite size pieces, add the drained Mandarin segments and dressing, mix well, and add Caramelized Almonds right before serving
