Butternut Squash Soup

My kids love this soup, and it’s so easy to make, simple and delicious!!!


Makes 6 – 8 oz portitions


Ingredients:


1.5 lb Butternut squash, seeded and diced big. (no need to peel)

4 ea Green Onions, white parts mostly, save green for garnish.

1 tsp. Kosher Salt

½ tsp. Black Pepper

3 C Vegetable broth or enough to cover

4 Tbsp Butter

8 oz White cheese (mozzarella diced or a good quality feta)



Instruction:


In a pot put Butternut squash, broth, Green Onions, Salt & Pepper and cook until butternut squash is tender.

Put all in a blender until very smooth, drain through a strainer and return to pot.

Bring to a boil, add broth if too thick, and melt butter.

Serve hot and garnish with cheese and green onions chopped
