Zucchini Carpaccio


This is a great side or can also be an appetizer… It is very simple and healthy as refreshing…





Makes 4 – 4 oz Portions


Ingredients:


2 ea. Zucchini, cut lengthwise in a mandoline slicer

4 Tbsp. Olive Oil

1 tsp. Kosher Salt

½ tsp. Black Pepper

2 Tbsp Lemon juice

1 oz Parmesan Cheese, Shavings

1 ea. Scallion or Green Onion, thinly sliced


Instruction:


Make a Lemonette mixing the Olive Oil Salt & Pepper and Lemon Juice and whisk well.

Place thin sliced Zucchini on a plate.

Very carefully drizzle Lemonette over the zucchini and sort of mixing it without braking the Zucchini.

Sprinkle with the Parmesan Cheese and enjoy!!!
