Roasted Green Beans Almondine
Being today National Almond Day!!! I thought of making Roasted Green Beans Almondine as a very nice compliment to any Dish…
Makes 4 – 4 oz Portions
Ingredients:
1 Lb. Green Beans
2 Tbsp. Olive Oil
1 ½ tsp. Kosher Salt
½ tsp. Black Pepper
½ C Almonds sliced, toasted
Instruction:
In a pot with boiling of salted water, Blanch Green Beans for 3 min and immediately pour in bowl with ice cold water to stop the cooking process. Cut ends of the Green Beans for a better presentation and discard any that is not a bright green color.
Preheat oven to a High Broil and place almons dry in baking sheet for 1-2 min max, just to bring out the flavor of the almonds, do not burn!!!
Once the almonds are toasted, mix the green beans in the same baking pan as the almonds drizzle with Olive Oil and massage well (carefully to not brake Green Beans and Almonds, and drizzle with Salt & Pepper to taste.
Throw pan back in the broil heat oven and broil for 3-4 min on top rack or 5-7 minutes on middle rack if you like your Green Beans a little bit more cooked.
