Pearl Onions Caramelized with Grand Marnier

 

Great to serve as a side dish to complement dishes that are strong in flavor and obtain a combination of Sweet and Sour effect. Pearl onions are small, marble-sized bulb onions known for their mild, sweet flavor and versatility in both cooking and garnishing.

 


Makes 4/ 4 oz portions

 

Ingredients:

 

30 each Pearl Onions (600 Gr) par boiled for pealing.

1 Tbsp Butter

½ tsp Salt

6 Tbsp Grand Marnier

2 Tbsp Balsamic

2 Tbsp Apple Cider Vinegar

2 Tbsp Sugar or Honey

 

Instruction:

  1. In a pot of Boiling water blanch onions (that have been cut in an X on top for easier peeling), Blanch 2-3 min. drain and place in ice water bath. Peel outer layer and let drain and dry a bit.

  2. On a sauté pan melt butter and add onions with salt, cook on high heat until golden on all sides.

  3. Mix Balsamic and Apple Cider Vinegar. Set aside.

  4. Add Grand Marnier and let reduce and evaporate the alcohol, add the Vinegar mix, and let it cook about 7-10 min. Depending on the size of the onions. Until the sauce has become syrup density. Lower the flame and keep cooking until onions are glazed all over.

  5. Serve Hot or at room temperature
