Beef Pad See Ew
I’ve eaten in many Thai restaurants all over and don’t remember seeing a dish called “Pad See-Ew”, until now… It’s street food in Thailand and it is very popular, and after trying it I can see why!!! Here is my version… You can always substitute the protein for Chicken, Seafood or even Tofu to create your own version!!!
Makes 2 – 8 oz Portions
Ingredients:
½ Lb. Flank Steak, sliced thin
Pinch of Salt & Pepper
Marinade:
1 tsp. Vegetable Oil
1 tsp. Soy Sauce
½ Tbsp Cornstarch
Sauce:
3 Tbsp Soy Sauce
1 ½ Tbsp Oyster Sauce
1 tsp Fish Sauce
1 tsp Rice Vinegar
1 tsp Sugar
Stir Fry:
2 ea Eggs, scrambled
4 ea Garlic Cloves, minced
4 Tbsp Vegetable Oil
8 oz Chinese Broccoli, trimmed and cut in 3” pieces
8 oz. Rice Noodles (wide), if you can’t find wide use the widest ones you can find.
Note: If you have a Chinese market near you could find the fresh wide rice noodles then you should use 1 lb. of fresh noodles
Instruction:
Salt and Pepper the sliced meat.
Mix the marinade ingredients and added to the meat and set aside or in fridge for 30 min.
In a bowl mix the sauce ingredients and set aside.
Scramble eggs and set them aside.
Have Broccoli and Garlic ready.
Have a pot of boiling water ready to cook the Rice Noodles. (Fresh noodles can be cooked directly in the stir fry), with Dry Noodles, I do prefer to time the cooking of the noodles in salted boiling water, while stir frying the beef, garlic, and vegetables, adding the sauce, then the cooked noodles, mixing well and finally the eggs. Right before serving.
Note: If the noodles are cooked before stir fry is ready, soak them in cold water to stop the cooking process and drain them well right before adding to the stir fry.
