Stuffed Potato with Beef and Cheese - Papa Rellena con Carne y Queso

This is a very popular dish in most of South America and the Caribbean that originates from Peru around 1870’s and made with a mash potato filled with simple ingredients, now a days each country have their own version, and you can come up with your own too!!!

Usually Papas Rellenas are made like a croquette, with Mashed Potatoes and Filling of Choice, my version is more of a Potato Boat topped with a delicious Meat filling, Cheese and more Potato and believe me is a full meal on it's own!!

 





6 Portions / 6 Servings

Ingredients:

 

3 ea Potatoes, large

2 Tbsp. Olive Oil

1 ½ tsp. Kosher Salt

Meat Filling:

1 lb Beef ground

Salt & Pepper

1/2 ea Onion Chopped

4 ea Mini Bell Peppers Chopped

4 ea Garlic Minced

1 Tbsp Tom Paste

½ C of Water or Broth

1 Tbsp Capers Nonpareille (small ones)

¼ C Black Olives Sliced, (or of Olive of Choice)

2 ea Boiled eggs, Sliced or Chopped

1/4 C Raisins (optional)

Mash Potato:

2 Tbsp Butter

2 oz Heavy Cream

Topping:

Pepper Jack (or cheese of Choice), Sliced or Shredded.

Parmesan Cheese

 

Instruction:

 

Rub potatoes with Olive oil, salt and pepper, wrap in aluminum foil and bake at 350 for 60 min. Turning potatoes ½ way (30 minutes).

In the meantime, Sautee Onions, Bell Peppers, and Garlic in a pan, adding beef and seasonings (Salt & Pepper and any herbs or seasonings of choice). Cook until meat is totally browned.

Add Tomato paste, and later add liquid and Raisins (if using), cooking until beef mixture is totally dry of liquid.

Add the Capers and Olives, cook for a couple of minutes, take of heat and add the Hard Boiled eggs, and mix. Check Salt & Pepper and set aside.

Cut potato in half lengthwise and carve the inside leaving enough thickness for potato not to brake creating a boat. Mash potato filling adding butter, heavy cream, Salt & Pepper to taste while still hot, mix well and fill a pipping bag with it.

Fill Potato with a thin layer of Cheese, followed by the meat filling, another layer of Cheese and top by pipping the mashed potato filling on top, sprinkle Parmesan cheese. Repeat with each potato.

Bake in oven at 400 F for 12-15 minutes until golden brown.

Serve hot.
