Kale Salad
I love this Salad, taste wise and because is so easy to make… Great for backyard BBQ or Picnics, since it holds well even after mixing in the dressing ahead of time..
Makes 4 portions
Ingredients:
Dressing:
2 Tbsp Lemon Juice
2 Tbsp Shallots , minced
2 Tbsp Honey
½ tsp Kosher Salt
¼ tsp Red Pepper Flakes
2 Tbsp Olive Oil
Salad:
1 lb Kale (Baby Kale works best, if made to eat right away)
2 Tbsp. Olive Oil
2 oz Almonds, sliced
8 ea Dates, chopped
2.5 oz Parmesan, shaved
Instruction:
Mix all the dressing ingredients well.
Massage Kale with your hands rubbed with Olive Oil until shinny.
If using regular Kale, do the massaging with Oil a couple hours before serving.
Toast Almonds, shave Parmesan, chop Dates.
Mix it all.
