Fish EVA
This dish was made for my Granddaughter Eva, my daughter trying to keep it as simple, for a 3 year old, as possible but also tasty enough for all of us… She (my granddaughter) loved it and so did we!!!
Makes 2 - 8 oz Portions
Ingredients:
1 Lb. Cod Fillets, or any fish you desire
2 Tbsp. Olive Oil
1 tsp. Kosher Salt
½ tsp. Black Pepper
2 ea. Garlic cloves, halved
8 oz Veggies (carrots, zucchini, onions, bell peppers, tomatoes, celery or whatever you have in hand)
1 C Vegetable or Fish Broth or Stock
1 ½ tsp. Parsley, chopped
Instruction:
In a pot large enough to fit the fish in one layer, heat Olive Oil to med heat.
Drizzle the fillets with some of the Salt and Pepper.
Sautee the Garlic cloves in the Oil (discard garlic once the oil has absorbed the garlic flavor). Place fish on the oil without frying, adding the chosen veggies, Salt and Pepper.
Add Vegetable or Fish Stock, bring to a boil and simmer covered for 7 minutes.
Fish should be cooked, if not let cook for another couple minutes.
Place fish on a serving plate, place Veggies around it and sprinkle with Parsley.
