Corned Beef and Cabbage
Celebrating St. Patrick’s Day??? Well this is a wonderful recipe for a celebration and very heartwarming, because on St.Patrick’s Day, we are all Irish!!!
Makes 8 - 8 oz Portions
Ingredients:
2.5 Lb. Corned Beef Brisquet
6 C Water Tbsp. Olive Oil
1 Tbsp. Black Pepper
1 tsp Allspice
2 ea Bay leaves
2 tsp Kosher Salt
½ Lb Carrots, diced
½ Lb Onions. Diced
1 Lb Potatoes, 2 “ diced
¼ Lb Celery, diced
1 ea Cabbage, sliced thick
Instructions:
Place Corned Beef in a pot large enough to hold it all together with water and all spices, herbs and seasonings. Bring to a boil and simmer 2.5 hours.
Add Carrots, Potatoes, Celery and cook 15 min.
Add Cabbage and cook another 15 minutes.
Discard Bay leaves and season to taste if necessary and serve.
