Chicken Salad


I like to make this with all the saved good scraps of chicken, when making a chicken dish… You can also use leftover chicken from a roasted chicken and it makes it very flavorfull…




Makes 8 – 4 oz portions


Ingredients:


1.5 lb. Chicken, cooked and shredded

3 oz Mayonnaise, better if home made, but a good quality mayo will do

4 oz Onion, chopped small

1 tsp. Celery Salt

½ tsp. Black Pepper


Instruction:


Mix all the above ingredients well and serve over greens.

Also great to use for sandwiches or tea sandwiches.
