Breaded Chicken w/ Tomatoes and Lemon
This is one of my girls favorite dishes… And the favorite of many, I liked to make this for them when very young instead of buying chicken finger and it’s amazingly budget friendly and easy to make…
Makes 8 - 4 oz Portions
Ingredients:
2 Lb. Chicken Breasts, sliced very thin lengthwise, about 4-5 pieces per breast
1 tsp. Kosher Salt
½ tsp. Black Pepper
1 C. Bread crumbs
2 ea. Eggs, beaten with 2 Tbsp Water
4 ea. Roma tomatoes, sliced
2 ea. Lemons, cut in wedges
Instruction:
Drizzle Salt and Pepper on the chicken slices.
Have ready beaten eggs and breadcrumbs in 2 different rectangular containers (capable enough to fit the chicken pieces. And dip chicken in the egg mixture, draining well before placing into the breadcrumb mixture. Pat the chicken well so the breadcrumbs stick well to it.
Heat oil to a medium high and put the breaded chicken to fry, it only takes a couple minutes per side. If chicken becomes too dark while frying lower the heat. Until you get a nice light golden crust.
I like to eat mine with tomato slices on top of the chicken, drizzled with lemon juice.
But if you add some greens with the tomatoes, it totally becomes a perfect full meal.
