Faux Gras
This is Surprisingly an amazing Appetizer and is totally Vegan Friendly, and if you think Vegan is boring... Think again!!!
Ingredients:
2 Tbsp. Olive Oil
1 ea Shallot
2 ea Garlic Cloves
1 tsp. Kosher Salt
½ tsp. Black Pepper
24 oz Mushroom small
2 Tbsp. Thyme, Rosemary and Sage Chopped
¼ tsp. Cinnamon Ground
1/8 tsp Cloves Ground
3 Tbsp Cognac
14 oz Lentils cooked
4 oz Walnut Chopped
2 Tbsp Soy Sauce
2 Tbsp Tomato Paste
4 oz Butter or Vegetable Fat to cover
Instruction:
Sautee Shallots with Olive Oil, salt and Pepper.
Add cognac and let reduce
Add Garlic, Mushrooms and Herbs, stirring until well cooked.
Add rest of the ingredients and cook until all flavors have mixed well. 5 min.
Mix all in a Food Processor, until smooth.
Add a splash of Cognac.
Place mixture in jars and cover with Fat or Butter.
