Crostata di Frutta

I learned how to make crostatas in Italy while my cooking was still at its beginnings, and learning how to make Jams from scratch, this was the perfect match. And by changing the filling... example: apples with brown sugar and toasted almonds, you have a different dessert every time!!!

This is one of my ever-favorite desserts to make at home because of how easy it is, delicious and it’s totally made from scratch in a very short time!!!




Ingredients:

Dough:

1 ½ C Flour

2 Tbsp Sugar

10 Tbsp Butter cold

½ tsp Salt

3 Tbsp Water Iced

Filling:

6-8 oz of your favorite Preserves, Jam or Marmalade

1 Tbsp Lemon Juice

¼ C Powder Sugar


Instruction:


In a food processor place flour and sugar, add butter in pieces and pulse until butter and flour mixture resembles coarse meal.

Add salt and ice water 1 Tablespoon at a time, adding water if seems to dry.

Gather the whole and shape into a flat ball. Refrigerate at least 1 hour.

Stir Lemon juice in the preserves.

Preheat oven to 400 F. Center Rack.

Roll dough in a 11” circle, place on cookie sheet or Pie Pan if preferred covered with parchment paper, spreading preserves, and leaving 2” clear on the borders, fold borders in and if you have any extra dough left, you can lace the top as seen in picture above. In the picture below, you can see that I made these in a Cookie sheet and folded the borders in over the preserves enough to not let the preserves spill out while cooking. I like it like this more because of its rustic look and feel. So don’t worry if the folding is a little raged…
