Baba Ganoush
This is a Favorite Middle Eastern dish that you can never eat to much of, or maybe you do end up eating way to much of, that's how good it is!!!
Ingredients:
2 ea Eggplants Lg
1 tsp. Kosher Salt
2 ea Garlic Cloves Minced
¼ C Lemon Juice
4 Tbsp Tahini
2 Tbsp Olive Oil
4 Tbsp Parsley Chopped
Serve with Pita Bread Rounds or Pita Chips
Instruction:
Roast Eggplant over fire or roast in an oven for 20 min at 350 F.
Put in a Bag, let in cool and peel or scoop out of the skin.
Mix Garlic and salt and make a paste, Add to eggplant with lemon and Tahini, mix until well combined.
Serve in a shallow dish and drizzle with Olive Oil and Parsley.
